CARROTS
The carrot is an herbaceous plant with the stem of green color, belonging to the family Umbelliferae; it is also one of the most common vegetables.
It is a biennial herbaceous specie, up to 100 cm high, and the second year it develops an erect and branched trunk with deeply divided green and hairy leaves. It has large globular umbels composed by ombrellette.
The fruits are diachenes bristling with spines that help the spread by animals. The root is a long, yellowish, cylindrical taproot, it is 18-20 cm long with a diameter of about 2 cm. In the common language it refers to the edible part such as carrot, of orange colouring, which is the root.

 

THE ROOT
Its characteristic orange colour is provoked by the high content of beta-carotene (vitamin A), that has many functions on the human body, like keeping the skin smooth and soft, obstruct a weak sight, help the formation of bones and teeth, moreover research showed that beta-carotene reduces the risks of lung cancer.
The calorie content of the carrot is really low, it’s about, in fact, 33 calories for 100 grams of product, then it’s great to enrich who follows a diet of vitamins and healthy substances.
The carrot is suggested for problems to the eyes like cataract and other diseases of the eye, it prevents the aging and favourites the twilight view.

 

RECIPES AND USES
Thanks to its penetrating aroma, it is used in the kitchen, other than on dishes that see it as the protagonist, like the cream of carrot soup, also to flavour and make other preparations more perfumed. It suffices to think of how the aroma of a vegetable soup varies by the only adding a carrot or of a recipe like carrot walnut, it’s also present into sweets like carrot cookies.
The qualities of the carrot are many, in fact, the precious root is used not only in the kitchen, but also in cosmetics and medicine.

 

HISTORY
The name “carrot” derives from the Greek “Karotòn”, while in botany it is known as “Daucus carota”.
The typical carrots’ yellow-orange colouring is due to the mutation of a mallow coloured specie.
Although its origin lies in the East, where it has been cultivated for thousands of years, the ancient Greeks and Romans already used carrots, not much on culinary purpose (because of the typical woody and hard consistence of the plant), as like officinal plants.
Today, the cultivation of carrots is spread in all Europe, in North Africa and in the Asian continent.
