The white onion is tond in shape with white and green tints; the taste is sweet and slightly pungent. Tender, juicy and with low content of dry matter. The taste is sweet and slightly pungent sulfur compounds for the few, it has a high content of vitamin C and very few nitrates.
- FRIED "FRATTAGLIE OF LAMB" WITH ONIONS
For 4 persons:
1 kg of offal, 1 kg of onions, white wine, bay leaves, extra virgin olive oil, salt and pepper.
Clean wash and slice the onions. Pour the oil into a frying pan, add the onions and two bay leaves and let it fry. Join the offal and continue to turn over for a few minutes.
Then add a glass of white wine and let it evaporate.
Adjusting, finally, with salt and pepper and continue cooking for at least fifteen minutes.
